Avocados are, I am sure we can all agree, one of the greatest things to eat ever. I bloody love guac, then there’s the classic avocado on toast (preferably with a poached egg). Recently I decided to try baking one with an egg in, cos I’d seen it all over Instagram. I’d also seen a video on Facebook, where someone baked an avocado wrapped in bacon, and it looked insane, but I wasn’t quite up to the challenge as I didn’t have enough bacon left. Instead, I decided to just sprinkle with bacon pieces and add some chives. This turned out to be a really yummy lunch, and super easy to do. Baking the avocado slightly changes it’s taste. When I thought about it, I had never really had hot avocado before. It takes on an almost smokey taste, but it’s still very very nice.
